WFMW: Quick Meal Fix

This week is a themed WFMW and it’s all about quick meal ideas — Who doesn’t need some of those?!?
I love pesto. I love cream sauces. I love pasta. I love cheese. So of course my quick meal idea would include all of those.
People who know me and have either cooked with me or asked me for recipes know that I’m not so big on ‘recipes’. I can give you the ingredients I use, and might be able to approximatesome measurements, but that’s as close to a recipe as I get for anything I’ve created.
So here goes — Creamy Pesto Tortellini:
Cook some fresh/frozen tortellini (cheese, meat, whatever filling you want). Especially the fresh ones take less time to cook than the water takes to come to a boil.
While the tortellini are cooking, in a saucepan heat some pesto (from a jar — this is a quick meal idea, not gourmet!), milk/cream (or my personal fav: Fat Free Half & Half), and some grated Parmesan cheese. You’ll need to whisk them to really get them blended. Heat to a simmer — be careful not to burn it! If you’ve got another minute before your tortellini is ready, you can throw in some diced tomatoes, too. (Fresh or from a can)
When the tortellini is cooked, drain in a colander and toss in the pan with the pesto cream sauce. Serve and enjoy!
So, let’s quickly review:
Creamy Pesto Tortellini
Tortellini (any flavor/filling)
Pesto Sauce (store bought)
Milk/Cream (whatever is in your refrigerator)
Grated Parmesan
Diced tomatoes (optional) (fresh or canned)
Cook tortellini and drain. Mix all other ingredients (whisk) in saucepan and heat. Toss together. Serve.
How easy is that? And DELICIOUS!!!
